Made our first batch of gluten free pancakes today - just went off what I'm use to using for pancakes and made my own recipe.
They didn't turn out too bad - the kids all asked for seconds. The fluff and general consistency of a "normal" pancake was there - but something caused a bit of an after taste for me - could just be that I'm not use to gf dough products yet.
2 C Flour Mix
1 teaspoon guar gum
1 Tablespoon baking powder
2 Tablespoons honey
3 Tablespoons butter
Milk to consistency (I always use more because we use a pancake mix squeezer thingy)
Flour Mix - 3 parts Milllet Flour, 3 parts Corn Starch, 2 parts Soy Flour, 1 part Massa Harina
